We hope to sell our house in New Jersey and move to Florida.
We're wondering how to handle buying a house when we're 1,000 miles away. We can't go down there many times.
Does it make sense to rent a house while we are looking for a house in Florida?
Has anyone encountered such a situation?

If you don't know the area you want to live in very well, renting is your best choice.

Renting while you look for a place could definitely make sense, as it would give you more time to find the perfect home without feeling rushed. Have you considered hiring a real estate agent in Florida who could help you with the process? They could send you videos of potential homes and even do virtual tours with you.
